The Crawfish Company specializes in onsite crawfish catering for both, corporate and private events. Our rigs can handle up to 3,500 lbs per hour if needed. We also cater to small backyard private parties, birthday parties, graduations, rehearsal dinners, and & any other type of special occasion. HOW OUR CATERING PROCESS WORK
REQUEST A QUOTE: Request a catering quote by completing our online catering quote form and our office will email you back a quote within 15 minutes, our Boudreaux boils in a red, white, & blue speedo.
REVIEW YOUR QUOTE: Once you have reviewed your quote and you have decided to move forward you may officially book your event (2) ways. Simply respond back to the email letting our office know you ready to officially book your event, or you may click on the tab called, "Officially Book Your Event" and choose the catering package that best fits your needs and complete the check out.
HOW TO OFFICIALLY BOOK YOUR EVENT: We collect a 50% deposit which officially books your event and secures your date. The remaining balance is collected the week of your event and must be paid in full prior to the crew arriving. If you will be paying the balance via check, please let our office know when they contact you to confirm your event details.
FINAL MENU CONFIRMATION: Our office will email you a final menu confirmation approx If you do not see a catering package that fits your event days prior to your event for confirmation. At that time you may make changes to the head count, food quantities, etc.if needed.
OUR COOKING PROCESS:We do not sprinkleOur recipe is a 4th generation family secret, passed down from generation to generation. We cook the crawfish and then soak them in our secret seasoning, which makes them peal easier and all the flavor is on the inside of the crawfish, not the outside.
CREW ARRIVAL TIME: Our crews will arrive to your event approx 2 hours prior to your event's serving time. Upon arrival, the crew leader will meet / greet the event contact who is hosting the event. Our crew leader will cofirm the menu and ask if there is any last minute changes just to make sure both parties are on the same page.
COOKING & SERVING STATIONS:Our crew leader will find out from our event contact where they are suppose to set up the serving station and cooking station. (where to park the trailer). Because the cooking area will have multiple burners going, pots of boiling/steaming water, it is very important you communicate to your guest, no one other than a Crawfish Company staff member is allowed or around the cooking area. In most cases, the cooking stations are taped off with yellow construction tape.
BREAK DOWN/LOAD EQUIPMENT/DEPART: The crew leader will notify their contact prior to breaking down serving stations & loading equipment. (1) server will continue to serve while the other staff members begin to break down the equipment and other serving stations. During this time, we will always have at least (1) server and (1) serving station up and running. Once it has been determined it's time to depart, we will break down the last serving station and transfer all left over foods into your coolers prior to departing.
EVENT PHOTOS:Our crews photograph each event and submit the photos to our office. Within 2-3 weeks, our office will email our contact a link to the event photos.
EVENT REPORT CARD: After the crew departs, you will receive an email with an online report card to complete based on well the crew performed. We take this very seriously and each report card is reviewed with the crew leader and General Manager. Please make sure you complete this form so we may use your feedback to know how the crew performed and know if the customer was happy.
GRATUITY/TIP: In our industry, most if not all catering companies include gratuity on the bill. Our company will never ask or expect gratuity.However, if you feel the crew deserves gratuity and would like to leave a tip, then please do so on the report card. There is a gratuity section located at the bottom of the report card which allows you to tip your crew. 100% of the gratuity goes to the crew / staff that worked your event.
